Salsa, Alternative

  • 2 regular sized tomatoes
  • 1/2 medium onion
  • 3/4 c cilantro
  • 1 lime, juiced
  • 1 can seasoned, fire-roasted tomatoes for salsa
  • salt

In a bowl, combine all ingredients except can of tomatoes. Use immersion blender until desired chunk level. Thoroughly strain out excess liquid. Put back in bowl. Add in undrained can of tomatoes. Stir together. Add salt to taste.

Yield: 2 cups
