General Tso's Sauce

  • 1 onion
  • 4 garlic cloves
  • 1/4 c brown sugar
  • 1/2 c apricot preserves
  • 1/4 c chicken stock
  • 1 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing Wine
  • 1 tsp chili sauce
  • 1 tsp rice vinegar
  • 1/2 tsp ginger powder
  • 1/4 tsp sesame oil

Finely chop the onion and mince the garlic and set aside. In a bowl, mix all of the ingredients after brown sugar together and set aside.

In a saucepan over medium heat, add the brown sugar with about half the amount of water. Cook until you can just smell the sugar burning (about 140 F or about the time the bubbles stop bubbling) then immediately add a splash of cooking oil and drop in the onions. Caramelize the onions to a deep brown color, then add the garlic and cook for a couple more minutes. Add the rest of the ingredients and whisk until everything is thoroughly mixed. Simmer for a few minutes or longer for a thicker sauce.
