Bananas Foster Blondies

  • 170 g Mashed overripe bananas
  • 100 g White sugar
  • 54 g Brown sugar
  • 85 g Softened butter
  • 1 Egg yolk
  • 2 tsp Vanilla extract
  • 3/4 tsp Salt
  • 1/2 tsp Baking powder
  • 150 g Flour
  • 43 g Chocolate chips
  • Sea salt

In a large saucepan, stir together mashed bananas and sugars with a rubber spatula. Cook over medium heat until bubbly. Boil for 5-8 minutes, stirring frequently until mixture has thickened and is syrupy.

Turn off the heat. Let cool at least five minutes. Whisk in the butter, then whisk in egg yolk and vanilla. 

Whisk in salt and baking powder, then fold in the flour with rubber spatula until almost no white streaks remain. 

Set aside for five minutes to cool slightly. Gently stir in the chocolate chips. 

Press batter into greased 8x8 inch pan. Sprinkle with sea salt. Bake at 350 for about 20 minutes.
