Sweet Potato Pie

- 2 c baked sweet potato, mashed
- 1 stick salted butter (+ 1/4 tsp salt if unsalted)
- 1/4 c packed brown sugar
- 1/2 c milk
- 2 eggs
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp clove
- 1 tsp vanilla
Separate eggs and beat the whites into stiff peaks (can add a little sugar if desired).
Mix sweet potato and butter thoroughly, then add yolks and the rest of the ingredients, and beat until mixture is smooth.
Pour mixture into a 9 inch pie crust and bake at 350 degrees for one hour.
