Buttermilk Biscuits

  • 4 c flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 1/2 tsp cream of tartar
  • 2 tsp baking powder
  • 2 sticks cold butter, diced
  • 1/2 c plain yogurt
  • 1 c milk

In a Kitchen aid bowl, whisk together flour and leavening. Add butter. Mix with a paddle until butter is evenly distributed. In a separate bowl, whisk together milk and yogurt. Stir in milk mixture on low speed, just until dough comes together. Add a little more if necessary. Turn dough out onto floured surface; do a letter fold three times. Roll into 1 inch thickness. Cut with a biscuit cutter.

Bake at 425 for 10-12 minutes.

Yield: 8 biscuits
