Sourdough Biscuits

  • 2 1/2 c flour
  • 1/2 c salted butter, cold, cubed
  • 1/2 c sourdough discard
  • 1 c buttermilk/milk
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda

  • 300 g flour
  • 125 g sourdough discard
  • 240 g buttermilk/milk

In the bowl of the Kitchen Aid mixer, whisk together flour, sugar, salt, baking powder and baking soda. Turn mixer on low with paddle attachment and cut butter in until crumbly. In a separate bowl, whisk together sourdough starter and milk. Add to mixing bowl and mix on low speed just until combined. 

Turn onto floured counter and fold over several times. Pat into 3/4 inch thickness. Cut with biscuit cutter. 

Yield: 8-12

*Note: Can make in advance but omit the salt, baking powder and baking soda. Right before you're ready to bake them, mix together the leavening agents. Roll out the dough and sprinkle the leavening over the top. Gently fold and knead until evenly distributed; cut with biscuit cutter and bake immediately.
