Oatmeal Cream Pies

Cookies
- 1 1/2 c Butter, melted
- 600 g Brown sugar
- 3 Eggs
- 1 tbsp Vanilla
- 480 g Flour
- 1 1/2 tsp Cinnamon
- 1 tbsp + 1 1/2 tsp Cocoa powder
- 1 1/2 tsp Baking soda
- 1 1/2 tsp Baking powder
- 3/4 tsp Salt
- 270 g Old fashioned oats
Filling
- 1 c Shortening
- 1 c Powdered sugar
- 2 Tubs vanilla frosting
- 1 Jar marshmallow cream
Stir together first four ingredients.
In a separate bowl, mix together the flour, cinnamon, cocoa powder, baking soda, baking powder and salt. Add to the wet ingredients.
Stir in oats.
Scoop small spoonfuls onto baking sheet.
Bake at 350.
Yield 3 1/2 -4 dozen Cookie Sandwiches
