Apricot Chicken

Chicken
- 1 lb Cubed chicken breasts
- 1/2 tsp Garlic powder
- Salt
- Pepper
- 3 tbsp Flour
Sauce
- 2/3 c Apricot preserves
- 1 Garlic clove, minced
- 2 tbsp Soy sauce
- 1 1/2 tbsp Brown sugar
In a small bowl, whisk together the sauce ingredients. Set aside.
In a separate bowl, combine garlic powder, salt and pepper and mix evenly into chicken. Toss with flour.
Heat 1/4 c. oil in a skillet.
Add chicken and fry until cooked through.
Stir in sauce.
Serve over rice.
